ARTISAN PASTA FACTORY

Before being millers and pasta makers, we are farmers and this is what makes the difference! In our company in Tuscany we produce pasta, stone-ground flour, cereals, legumes and wine, all organic!

We decided to invest in the reorganization of our supply chain in order to guarantee the sustainability of local crops, integrating all the stages of cereals production inside the company: a perfect balance between tradition and modernity.

Set in Val d’Orcia, our farm uses organic farming since 1992: the cereals are stone milled inside the farm, producing flours and brans used for bronze-cut pasta production.

FARMERS

The Grappi Luchino Farm has been producing organically since 1992 in the municipality of Pienza, in the heart of the Val d’Orcia, a UNESCO World Heritage Site for the beauty of the landscape and the balance between nature and human activity.
The company, family run for generations, covers more than 100 hectares, 85 of which arable land where we grow cereals such as durum wheat, soft wheat, emmer, oats and barley in rotation with grain legumes such as chickpeas, lentils, beans and Alexandrian clover, 5 hectares are also used for the cultivation of olive trees and vines.

MILLERS

And we do it slowly: supporting Mother Nature, cultivating only Grains of Ancient Varieties, and respecting what we get. All our flours come exclusively from or varieties of ancient grains, of which we are proud guardians.

Only stone milled, they do not undergo any treatment or addition of preservatives or additives and guarantee the best possible integrity and healthiness. You can trust it.

PASTA MAKERS

We pursue a different Idea of Pasta, grinding the recognized excellence of Senatore Cappelli Durum Wheat Wheat; bronze drawing, the result has peculiar and unique characteristics: undoubted the nutritional ones, thanks also to slow drying, but even more those of the pleasure it gives in cooking and eating it. Amber-colored and with an irregular and therefore porous surface, with a tenacious but not stubborn structure, albeit good with everything.

The new production plant

The new production plant is located 2km from Monticchiello, is surrounded by our fields and overlooks the Val d’Orcia with a splendid view of Pienza.

The Castle Mill

The fresh pasta laboratory and sales point are located in the Spedaletto Castle, an ancient grange which in the Middle Ages kept the wheat produced in the Val d’Orcia and offered hospitality to pilgrims traveling along the Via Francigena.
